The Perfect Brunch Smoothie & Energy Drink
I recently invited friends to a Sunday brunch in my home, after a morning of kayaking on the Chicago River. Usually a glass of mimosas with champagne is a great complement to our brunches, but this time I decided to serve a much healthier drink – Kale Apple Smoothie! It was a big hit and I am going to add it as my morning energy drink because it is also great before a workout!
· 2 large kale leaves , washed with stems removed. Use a couple handfuls of baby kale instead for a milder kale flavor
· 1 large apple
· 1 tablespoon chia seeds
· 2 teaspoons ground or whole flax seeds
· 1 - 2 tablespoons maple syrup
· ½ medium lemon , juice only
· 180mls / ¾ cup plant-based milk , add up to a ¼ cup more to thin if you prefer it that way
· 5 ice cubes , optional but will make it colder and a bit thicker
· 1 tablespoon almond butter , optional - It's great with or without
Add all ingredients to a blender or Nutribullet, blend till smooth and enjoy immediately!
